Beefy n' Cheesy Protein Packed Burritos

Who doesn’t love an indulgent cheesy burrito? These Beefy Yogurt Burritos are a powerhouse of protein, packing over 30g per serving from lean ground beef, Greek yogurt, and black beans. They're a clean and lean option, free from unhealthy grease. Perfect for meal prep, you can whip these up in under 30 minutes, making them an ideal go-to freezer stuffer for busy days. The combination of tender beef, creamy Greek yogurt, Tex Mex cheese, and a hint of grilled veggies delivers a satisfying flavor that's easily customizable with jalapenos for an extra kick. Ingredients:

  • 1 lb lean ground beef

  • 1 onion, diced

  • 1 can of black beans

  • 1/2 green pepper, diced

  • 1/2 red pepper, diced

  • 4 tablespoons taco seasoning

  • 1/4 cup water or broth

  • 1 cup low-fat plain Greek yogurt

  • 1/2 cup Tex Mex cheese, shredded

  • 1/4 cup grilled corn kernels

  • Sliced jalapenos (optional, for an added kick)

  • Tortillas (large, burrito size)

  • fresh cilantro for garnish

Instructions:

  1. Prepare the Beef n’ Bean Filling:

    • In a large pan, sauté the diced onion, green pepper, and red pepper over medium heat for 3-5 minutes until softened.

    • Add the lean ground beef to the pan and brown it, breaking it apart with a spoon as it cooks.

    • Drain and rinse the black beans and pulse in a blender or food processor. Add it to the beef and cook for 3-5 min. 

  2. Season and Cook:

    • Once the beef is browned, add the taco seasoning and 1/4 cup of water or broth to the pan.

    • Stir well to combine the seasoning and liquid with the beef mixture.

    • Cook for a few more minutes until most of the liquid has evaporated and the beef is well seasoned. Remove from heat and set aside.

  3. Prepare Yogurt Mixture:

    • In a large bowl, combine the low-fat plain Greek yogurt, Tex Mex cheese, grilled corn kernels, and sliced jalapenos (if using).

    • Mix well until the cheese starts to melt and the yogurt becomes creamy.

  4. Combine and Fill Tortillas:

    • Add the cooked seasoned beef and onion mixture to the bowl with the yogurt mixture.

    • Mix everything together thoroughly until well combined.

  5. Assemble Burritos:

    • Spoon 1/4 to 1/2 cup of the beefy mixture onto each tortilla.

    • Roll the tortilla tightly around the filling, folding in the sides as you go.

  6. Serve or Store:

    • Enjoy the burritos immediately as they are, or for a crispy crust, grill them on a grill pan or skillet for a few minutes per side.

    • If not consuming immediately, you can refrigerate the assembled burritos for later consumption. They can also be frozen for longer storage.
